Abstract
El Proyecto Final de Ingeniería se llevó a cabo en FRIGORÍFICO PICO S.A., una empresa dedicada a la producción de carne vacuna con una amplia variedad de productos para clientes nacionales e internacionales. El proceso productivo consta de hasta 3 ciclos: faena/matanza de ganado bovino (Ciclo I), despostada de medias reses o cuartos (Ciclo II) y charqueo y packaging especial para productos “premium” (Ciclo III). Actualmente, existe una falta de información sobre el Ciclo II, lo que motivó este proyecto para analizar el sector desposte en la planta Trenel y proponer un plan de mejoras que impacte positivamente en las ventas, la organización, la generación de datos, la reducción de tiempos improductivos y el aumento de la productividad. Además, se busca adquirir conocimientos y experiencia para aplicar estas mejoras en otras empresas en el futuro.
The Final Engineering Project was carried out at FRIGORÍFICO PICO S.A., a company dedicated to the production of beef with a wide variety of products for national and international clients. The production process consists of up to 3 cycles: slaughter/killing of bovine livestock (Cycle I), cutting of half carcasses or quarters (Cycle II) and jerky and special packaging for "premium" products (Cycle III). Currently, there is a lack of information about Cycle II, which motivated this project to analyze the cutting sector in the Trenel plant and propose an improvement plan that positively impacts sales, organization, data generation, reduction of unproductive times and increased productivity. Furthermore, it seeks to acquire knowledge and experience to apply these improvements in other companies in the future.
